  • Process

This washed lot includes a 36-hour whole cherry fermentation, followed by 60 hours in tanks after depulping. It’s then sun-dried and regularly turned to ensure uniformity and flavor clarity.

  • Variety

A blend of Caturra and Colombia varieties, grown between 1,600 and 1,900 masl. These cultivars are prized for their balance of sweetness and acidity when processed with care.

  • Tasting Notes

Comforting and complex with notes of caramel, cinnamon, dried cranberries, and orange peel. A cozy, spiced cup with subtle fruit and a clean finish.

Producer Profile

This lot is produced by 32 smallholder families across various parts of Huila, Colombia. Each family interplants their coffee with grapefruit, kiwi, and native flowers, creating a rich, biodiverse growing environment.

Producers begin with a 36-hour fermentation in cherry, followed by 60 hours in concrete tanks post-pulping. Careful drying under the sun, with frequent rotation, enhances consistency and cup quality. The result is a harmonious and expressive representation of Huila’s diverse microclimates and the collaborative spirit of its farming communities.
