  • Process

This washed lot undergoes 18–36 hours of fermentation after pulping, followed by traditional washing and sun-drying on patios and marquesinas for 12–20 days.

  • Variety

A regional blend of Castillo, Caturra, and Colombia varieties grown between 1,500 and 2,200 masl. These cultivars are well-suited to Cauca’s high elevations and diverse microclimates.

  • Tasting Notes

Deep and vibrant with notes of baker’s chocolate, blackberry, and yellow plum. A rich, fruit-forward cup with balanced sweetness and a smooth, lasting finish.

Producer Profile

This lot is sourced from smallholder farmers across Cauca, Colombia, a region known for its volcanic soils and dynamic microclimates. Coffee is often grown alongside plantains, bananas, and fruit trees, creating a diverse and resilient agricultural system.

For these families, coffee is both a livelihood and a cultural tradition rooted in generations of knowledge. Careful harvesting, controlled fermentation, and attentive drying practices come together to highlight the region’s signature profile. The result is a coffee that reflects not only the land, but the collective effort and pride of its producers.
