    This washed Pink Bourbon is fermented for 45–50 hours before being washed and slowly dried on patios and solar dryers. The extended fermentation enhances clarity and complexity in the final cup.

    Pink Bourbon is a rare variety once thought to be a Red and Yellow Bourbon hybrid, but now believed to be of Ethiopian origin. It’s prized for its bright fruit character and unique coloration, which demands precision in harvesting and processing to unlock its full potential.

    Juicy and vibrant with notes of pineapple jam, grapefruit zest, and strawberry lemonade. A tropical, refreshing cup with sparkling acidity and a clean finish.

Producer Profile

This lot comes from a group of smallholder producers in Salado Blanco, Pitalito, Huila, known collectively under the name Palo de Rosa. Each producer focuses on careful cherry selection, long fermentation, and consistent drying to bring out the best in Pink Bourbon.

At altitudes between 1,600 and 1,900 masl, the microclimate and post-harvest techniques come together to produce outstanding coffees. These producers manage their Pink Bourbon plots with great attention to detail, from intercropping for pollination to ripeness selection at harvest, a labor-intensive process that results in nuanced, expressive cups.

Meet the artist behind the label

I’ve always loved spotting butterflies in Colombia, even before knowing it held the world’s most. The varieties are astounding: hallucinating transparencies, brightly coloured bodies, geometries that mystify. I first saw the Morfo Azul after a long hike in the Sierra Nevada. We cooled off beneath a waterfall when two appeared, illuminated by the same warm light that made the river flicker like gold. Their wings, wide as my hand, were first iridescent cobalt, then a glistening cerulean, then stark, midnight blue.

I'm a community-engaged artist, designer, and educator interested in using art and design as tools for participation and mobilization. Currently, I'm working on various arts and education projects in the region of La Guajira, Colombia.
