    This coffee is produced using Las Lajas’ signature Alma Negra natural process. Cherries are first dried inside a greenhouse for 2–3 days with constant movement, then transferred to raised beds during the day and returned to the greenhouse each night. This slow, controlled drying develops exceptional sweetness and complexity.

    100% Parainema, a high-yielding Sarchimor selection developed for disease resistance and cup quality. Its compact growth and adaptability make it well suited to Central America’s mountain climates, producing coffees with vibrant acidity and distinctive fruit character.

  • Tasting Notes

    Bold and decadent with notes of 80% dark chocolate, blackberry jam, and red sangria. A rich, wine-like cup with syrupy sweetness and a lingering finish.

Producer Profile

Oscar and Francisca Chacón are third-generation coffee producers and pioneers of Costa Rica’s specialty coffee movement. In 2005, they established their own micromill, Las Lajas, giving them complete control over processing and allowing them to experiment with honey and natural methods that would redefine Costa Rican coffee.

Innovation became essential after a 2008 earthquake disrupted electricity and water during harvest. Rather than abandoning the crop, the Chacón family developed new drying techniques using raised beds and greenhouses, leading to the creation of their now-famous Alma Negra process. Today, Las Lajas is internationally recognized for producing some of Costa Rica’s most distinctive naturally processed coffees, combining decades of experience with an unwavering commitment to quality.

Costa Rican illustrator and graphic designer based in Barcelona, Spain. I have a deep love for animals, silly monsters, nature, and all things tender. I've been drawing for over 10 years, and I don't plan on slowing down anytime soon.
