  • Process

Hand-picked ripe cherries undergo carbonic maceration for 72 hours after a short fermentation and pulping stage. The coffee is then washed and slow-dried on raised beds for 25 days.

  • Variety

This lot is 100% Sidra, a unique hybrid varietal born in Ecuador. Known for its high-quality potential, Sidra blends the floral elegance of Ethiopian landraces with the complexity and structure of Bourbon genetics.

  • Tasting Notes

A juicy, bright cup with notes of blood orange and guava candy. Sparkling acidity meets a silky texture and vinho verde-like vibrancy, offering a dynamic and expressive profile.

Producer Profile

Finca La Marquesa is located at 1650 meters above sea level in San Pedro de Vilcabamba, Loja, Ecuador. The 3.5-hectare farm is led by Ximena León and Hubert Ontaneda, dedicated producers who focus on cultivating high-quality, experimental microlots.

The region’s unique terroir, with its dry mountain air and diverse soil composition, supports slow cherry maturation and complex flavor development. The farm applies selective harvesting and innovative processing protocols, including carbonic maceration and controlled drying techniques, to bring out the full potential of the Sidra varietal.
