  • Process

This anaerobic washed Typica undergoes a controlled fermentation before washing and drying. The process enhances clarity while adding depth and complexity to the cup.

  • Variety

100% Typica, grown at an impressive 2,450 masl in the cloud forests of Nanegal, Pichincha. At this elevation, the variety develops exceptional sweetness, vibrant acidity, and remarkable complexity.

  • Tasting Notes

Complex and elegant with notes of cola, red apple, dried cherry, and orange zest. A lively acidity is balanced by layered sweetness and a long, refined finish.

Producer Profile

Finca San Pablo is owned and managed by Pablo Ponce in La Perla, Nanegal, Pichincha. After spending time living in Milan, Italy, Pablo developed a deep appreciation for specialty coffee and returned to Ecuador with a mission of producing exceptional coffees on his family farm.

Situated at 2,450 meters above sea level, the farm benefits from one of Ecuador’s highest coffee-growing elevations. The cool climate and slow cherry maturation create ideal conditions for producing coffees with remarkable clarity and complexity. Through meticulous cultivation and innovative processing, Pablo continues to showcase the extraordinary potential of Ecuadorian coffee.

Meet the artist behind the label

Holding a Bachelor’s degree in Visual Arts from UArtes, Pedro is a visual artist and illustrator whose creative practice is rooted in everyday life and fabulation, exploring artistic creation as a space where experience, body, and thought intertwine. Through drawing and design, he develops personal projects, understanding illustration not merely as image-making but as a field of research, narrative exploration, and sensorial inquiry.

His work has been exhibited in national exhibitions (The Threshold of the Gaze, 2025, Acero Galería, Quito, Ecuador; Other Practices Regarding the Abyssal, 2025, SpacioCultural, Quito, Ecuador; What Shines When It Breaks, 2025, CIFF Gallery, Guayaquil, Ecuador; Quema, 2025, Municipal Museum of Guayaquil, Guayaquil, Ecuador; Loading, 2023, QGalería, Quito, Ecuador) and international exhibitions (Bacánika Visual Salon 2025, Bogotá–Medellín, Colombia). His drawings have also been featured in collective graphic publications (Illustrator’s Cookbook, JumboPress Publishing, Barcelona, Spain, 2026; Panto 02, Rey Neblina Publishing, Quito, Ecuador, 2025; Ouch! Magazine, Brooklyn, USA, 2022).

He occasionally works as a screen-printing technician and art director. He loves the music of Men I Trust and, although it may seem like a trivial detail, much of his visual language emerges from attentive listening to the music he loves.
