Producer Profile

Blue Ayarza is sourced from smallholder producers surrounding the Laguna de Ayarza in southeastern Guatemala. Formed within the crater of two collapsed volcanoes, this remarkable landscape is known for its deep blue lakes, cool climate, and rich volcanic soils that create ideal conditions for growing specialty coffee.

Recognizing the region's potential, Covoya Guatemala established a wet mill to work directly with local farmers and highlight the area's unique coffee profile. For this lot, producers deliver carefully selected ripe cherries to the mill, where they are naturally processed through slow patio drying before being finished in mechanical dryers. The result is a vibrant coffee that showcases both the exceptional terroir of Ayarza and the dedication of the farming communities who cultivate it.
