    This full natural decaf is processed using the Ethyl Acetate (EA) method. After fermentation and sun-drying, caffeine is gently removed using EA, a naturally occurring compound found in fruits, preserving the coffee’s full character and sweetness.

This lot represents the work of smallholder farmers from various coffee-growing communities in Mexico, cultivating at high altitudes in mineral-rich soils. Their coffees are selected for sweetness and structure before being decaffeinated at origin.

The decaffeination process uses Ethyl Acetate (EA), an organic compound found in fruits and vegetables, to bond with and extract caffeine. Beans are steamed or soaked to expand, then immersed in EA to remove caffeine, rinsed, dried, and re-bagged, all while maintaining cup integrity. This method allows for a more sustainable, origin-based approach to decaf, preserving flavor and supporting local infrastructure.
