    This coffee is fully washed, beginning with meticulous hand-sorting and cherry floating to remove lower-density beans. After fermentation and washing, the coffee is dried slowly in the sun, with mechanical dryers (guardiolas).

  • Variety

    A rich blend of Bourbon, Catuai, Caturra, Lempira, Ihcafe 90, Pacas, and Typica. These varieties are well-adapted to the Honduran highlands.

  • Tasting Notes

    A comforting and gently aromatic cup, caramelized banana brings mellow sweetness, balanced by the vibrant brightness of mandarin. The finish is soft and lingering, with delicate hints of chamomile that add a calming, herbal note.

Producer Profile

This coffee is produced by members of Café Orgánico Marcala (COMSA), a pioneering cooperative of over 1,500 farmers in Marcala, La Paz, a region with a protected designation of origin (Denominación de Origen Café de Marcala). Grown at altitudes between 1300–1700 masl, these coffees are cultivated with organic and biodynamic practices rooted in a philosophy known as Finca Humana, a holistic approach that emphasizes human and environmental harmony.

COMSA’s members process their coffee with precision, from hand-sorting and cherry selection to extended drying times, and invest in knowledge-sharing through their La Fortaleza demonstration farm and community programs. Coffee sales support education and sustainability initiatives, including a school that empowers future generations to lead with care for both land and people.

At every level, COMSA’s approach reflects a deep respect for nature, people, and the potential of coffee to nurture both.

Meet the artist behind the label

Born and raised in Tegucigalpa, Honduras, Rodolfo was scribbling on walls from the moment he could hold a crayon. His love for illustration led him into the worlds of graphic design, photography, and animation. After graduating with a BFA in Graphic Design in the U.S., he returned to Honduras and dove deep into the world of coffee. This new obsession helped him learn more about the Mesoamerican people of Honduras, which would later become a pillar of his illustration work. He now lives in Toronto, where he continues to make great work and more importantly, drink great coffee.
