    This washed lot undergoes two stages of fermentation: 24 hours in sealed bags or wooden tubs before pulping, followed by an additional 24-hour fermentation. The coffee is then dried on raised beds for 6–8 days.

  • Variety

    Pluma, a regional mutation of Typica widely grown in Oaxaca. At 1,850 masl, this high-altitude variety develops clarity, sweetness, and elegant structure.

  • Tasting Notes

    Rich and vibrant with notes of molasses, raspberry, and green grape. A syrupy sweetness meets crisp fruit acidity, creating a balanced and expressive cup.

Producer Profile

This coffee is produced by Benito José Reyes and Iván Alberto Pacheco in San Agustín Loxicha, Oaxaca. Their farms, Loma Miramar and Loma Escondida, average 3.5 hectares and sit at approximately 1,850 masl.

This lot reflects careful hand selection and thoughtful processing. The two-stage fermentation and raised-bed drying showcase the producers’ dedication to quality and precision, resulting in a clean, structured expression of Oaxaca’s Pluma variety.

Meet the artist behind the label

Alejandra Macouzet is a Mexican illustrator based in Toronto, Canada. She studied Fine Arts at the Universidad de Guanajuato in the colorful city of Guanajuato, Mexico, which sparked her love for vibrant color palettes. Her art work ranges from cozy coloring books to illustration for animation, and is known for its cute and whimsical style with adorable characters and detailed scenes.
She recently self-published a collection of coloring books and loves creating artwork that invites people to slow down and reconnect with their creativity. In her spare time, she enjoys roller skating, coloring in her own favorite books, and crafting miniatures.
