    This full natural decaf is processed using the Ethyl Acetate (EA) method. After fermentation and sun-drying, caffeine is gently removed using EA, a naturally occurring compound found in fruits, preserving the coffee’s full character and sweetness.

  • Variety

    A mix of high-altitude Arabica cultivars grown in volcanic loam and clay-rich soils. This lot is made up of coffees from smallholder producers across Mexico’s diverse growing regions.

  • Tasting Notes

    Sweet and plush with notes of marshmallow, malt, cacao, and hints of dried fruit. A round, chocolatey profile with balanced sweetness and smooth texture.

Producer Profile

This lot represents the work of smallholder farmers from various coffee-growing communities in Mexico, cultivating at high altitudes in mineral-rich soils. Their coffees are selected for sweetness and structure before being decaffeinated at origin.

The decaffeination process uses Ethyl Acetate (EA), an organic compound found in fruits and vegetables, to bond with and extract caffeine. Beans are steamed or soaked to expand, then immersed in EA to remove caffeine, rinsed, dried, and re-bagged, all while maintaining cup integrity. This method allows for a more sustainable, origin-based approach to decaf, preserving flavor and supporting local infrastructure.

Meet the artist behind the label

I’m a self-taught multidisciplinary artist working and living in Toronto, Canada. Growing up in Mexicali, Baja California, my childhood was shaped by folkloric tales that warned children of danger or conveyed important lessons. These stories made a lasting impression on my young mind and have become a core part of my practice. But the most impactful stories, for me, were the ones children told each other, blending familiar folklore, imagination, and life reflections. Drawing from this storytelling blueprint, my work navigates the spaces of familiar memory, the subconscious, dreams. Familiar stories and folklore I draw inspiration from include La Llorona (weeping mother), La Nahuala (shapeshifter), Alebrijes (anthropomorphic animals), Brujas (witches), and many more.

In this illustration, I explore the jaguar figure as a fun and curious character in motion, pouncing through a cactus garden. This piece mixes design elements and familiar Mexican motifs in a playful yet expressive way.
