    This coffee is fully washed and sun-dried. In the washed process, ripe coffee cherries are carefully depulped to remove the outer fruit, then fermented and rinsed clean before being dried in the sun.

  • Variety

    A harmonious blend of: Bourbon, Caturra, Catuai, Mundo Novo, and Typica. These varieties are well-adapted to the region’s terrain and climate, contributing complexity and balance to the cup.

  • Tasting Notes

    This cup opens with the mellow sweetness of ripe honeydew melon, followed by rich, syrupy notes of panela (unrefined cane sugar), and a finishing warmth of gentle allspice.

Producer Profile

This coffee comes from members of CEPCO (Coordinadora Estatal de Productores de Café del Estado de Oaxaca), a cooperative that brings together over 4,000 small-scale producers from 134 communities across Oaxaca’s Sierra Madre del Sur.

Farming in diverse, intercropped landscapes between 900–1700 masl, producers cultivate coffee using organic practices grounded in knowledge passed through generations. Many manage their own micro-mills, overseeing each step of the harvest and drying process.

CEPCO supports its members by strengthening access to credit, certifications, and infrastructure, collaborative efforts that contribute to both quality coffee and long-term community well-being.

Meet the artist behind the label

Ernesto Cabral de Luna is a Mexican lens-based artist working in Toronto. Interested in narratives of migration, his practice examines the interplay between memory, dislocation, and displacement, particularly in the context of exile. His work centres around altering perception – providing new ways to experience recognizable imagery in unconventional manners and outside of their intended purpose. Ernesto received his Honours BFA in Photography from OCAD University in 2024. His artwork "Azul de mi Cielo" is a cyanotype printed on fabric of Talavera that he brought back from his hometown of Mexico. The adorned ceramic plates are deeply symbolic of his family's roots and home.
